Sweet Potato Noodles Skillet

Description

Sweet Potato Noodles Skillet! A quick and easy, one pan meal featuring savory ground turkey, spinach, and sweet potato noodles.

Ingredients

  • 1 lb of ground turkey
  • 2 big handfuls of baby spinach
  • 67 oz of sweet potato noodles
  • 3-4 tbsp of veggie or chicken broth
  • 1 tbsp of olive oil or avocado oil
  • 1 tsp of ground cumin
  • Himalayan salt to taste

Instructions

  1.  Heat oil in a skillet over medium heat. Add ground turkey to the skillet along with salt, cumin, and pepper.
  2.  Halfway through cooking the ground turkey, add the sweet potato noodles. Cook for 5-7 minutes, tossing with a spatula. You can add a few tbsp of broth to prevent noodles from sticking.
  3.  Add in baby spinach and cook for a few more minutes, or until the spinach is wilted.

Notes

I used pre-spiralized sweet potatoes from Whole Foods in this recipe, but feel free to use a spiralizer and make your own sweet potato noodles.

If you aren’t a fan of sweet potatoes, feel free to substitute them with zucchini noodles! Adjust cooking time as needed.

To make this meal meat-free, use diced mushrooms or tofu instead of ground turkey.
