Description

This easy vegan quinoa breakfast bake recipe is a delicious brunch or breakfast! It is sweet, fresh, and so light and filling. Plus, it takes 10 minutes of prep time!

INGREDIENTS

2 ripened bananas, peeled

2 cups plant-based milk

1 cup dry quinoa

3 tablespoons chia seeds

3 tablespoons pure maple syrup

2 teaspoons ground cinnamon

1 teaspoon maple extract (may substitute 1 1/2 teaspoons vanilla extract)

1/8 teaspoon salt

1 1/2 cups fresh berries (blueberries, raspberries, or blackberries)

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Place bananas in a 2-quart baking dish and mash with a heavy fork.
  3. Stir in plant-based milk, quinoa, chia seeds, maple syrup, cinnamon, maple extract, and salt. Mixture will be very loose, just be sure to evenly disperse the ground cinnamon. Fold in mixed berries.
  4. Bake 60 minutes, until the top has browned and the sides are coming away from the baking dish. Let cool at least 5 minutes before spooning out to serve.
