Tomato-Free BBQ Chicken: A Delicious GERD-Friendly Alternative
Savoring BBQ chicken shouldn’t mean sacrificing your comfort.
Tomatoes have long been associated with causing heartburn, a common woe for many, including myself. For those of us dealing with persistent reflux symptoms, tomatoes can be a troublesome ingredient. However, if you’ve ever had to bid farewell to tomatoes, you’re in good company. As a former tomato enthusiast, I understand the struggle all too well.
But here’s the good news: you can still relish delicious meals without the discomfort. I began tweaking recipes to suit my needs and that’s when the slow cooker tomato-free BBQ chicken was born. It’s now an absolute staple in our household, loved for its simple, hearty flavors.
Tomato-Free BBQ Sauce – This sauce is a game-changer for those with GERD, providing all the bold flavors of traditional BBQ sauce without the acidic kick.
Chicken Breast – Lean protein like chicken is easy on the stomach and a versatile base for this dish, ensuring a hearty and satisfying meal. You can use boneless, skinless breasts or thighs.
Tomato Free BBQ Chicken Directions
Prepare the BBQ Sauce: simply follow the directions to make this low acid big flavor, tomato-free sauce.
Layer the Ingredients: Place the chicken in the slow cooker and pour the tomato-free BBQ sauce over the top. Make sure each piece is well-coated.
Set and Forget: Cover the slow cooker and set it to low heat. Let the chicken cook for 6-7 hours, or until it’s tender and easily shreds with a fork.
Shred the Chicken: Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce in the slow cooker for a final soak in those delicious flavors.
How to Serve Slow Cooker Tomato Free BBQ Chicken
My favorite way to serve this slow cooker tomato-free BBQ sauce is to spoon it on top of our Baked Potatoes for Acid Reflux. It’s unbelievably moorish. You could also serve it with your favorite buns and our Creamy Whole 30 Coleslaw for a weeknight dinner that is sure to become a family favorite. Or serve it over a salad topped with our Low Acid Creamy Herb Dressing. Use it as a topping on our Gluten Free Pizza for a new Friday night special.
Honestly, there is no going wrong with this one.
