The earthy flavor of mushrooms combined with perfectly cooked rice makes for a mouth-watering combination that’s hard to resist.

 

But what’s even better is that this recipe doesn’t just taste good, it’s also great for your gut health! The turmeric adds a warm and subtle flavor while packing a powerful anti-inflammatory punch, and the bone broth provides essential nutrients that are easy on the stomach. So not only will you be satisfying your taste buds, but you’ll also be doing your body a favor by nourishing it from the inside out.

Ingredients For Mushroom Rice

 

  • Mushrooms – Mushrooms have a unique and savory taste that makes them a delicious addition to many dishes, and their potential health benefits include boosting the immune system, reducing inflammation, and improving brain function.

 

  • Brown Rice – Brown rice is a low-acidic food that can be a good option for people with acid reflux, as it provides fiber and nutrients that promote digestion, regulate bowel movements, and may reduce the risk of acid reflux symptoms. Plus, its nutty flavor and chewy texture make it both satisfying and delicious.

 

  • Bone Broth – Bone broth can help relieve acid reflux symptoms by providing nutrients and minerals that promote healthy digestion, reduce inflammation, and may heal the gut lining. That’s why I try to sneak it into everything!

 

  • Salt & Thyme – To make all those savory flavors pop!

How To Make Mushroom Rice

 

First, saute the mushrooms in some bone broth for 4-5 minutes. Season with pink salt and thyme leaves. Set half the mushroom aside.

 

Then, add brown rice to a pot along with bone broth and bring to a boil. Reduce the heat and cover, letting it simmer on low for 45-50 minutes or until brown rice absorbs the liquid.

 

Finally, stir in the remaining mushrooms, and season with salt and thyme to taste.

 

What To Serve With Mushroom Rice

 

Mushroom rice is so delicious and satisfying, it’s like a party in your mouth that leaves you feeling full and happy – it’s a meal that can definitely stand on its own!

 

But it is usually considered a side dish. I can’t think of any main dish that it wouldn’t go well with honestly! I’d serve it alongside Pad Pak Thai or use it as your base in a Nourshing Bowl. It’s so delicious with our Crockpot Honey Chicken on top, I’m drooling just thinking about that combo again. It would also be a terrific side for our Maple Sage Breakfast Patties!

 

You really can’t go wrong here.

 

How To Store Mushroom Rice

 

To preserve the mushroom rice, place it in an airtight container and store it in the fridge for up to 4 days, or freeze it in a freezer-safe container for up to 3 months – to reheat, simply use a microwave.

Ingredients

8 oz sliced mushrooms

2 cups of brown rice

4 cups of bone broth

Pink Himalayan Salt to taste

78 sprigs of thyme


Instructions

  1. Saute the mushrooms in some bone broth for 4-5 minutes.
  2. Season the cooked mushrooms with pink salt and thyme leaves and set aside.
  3. Add rice to a pot along with bone broth and bring to a boil.
  4. Reduce heat and cover, letting the rice simmer on low for 45-50 minutes or until brown rice has absorbed the liquid.
  5. Stir in the remaining mushrooms and season with salt and thyme to taste!
